Potato Wedges
Sumac is a reddish-purple ground spice made from the berries of a wild shrub grown in Lebanon.
It is available from Middle Eastem food stores and delicatessens.
5 medium potatoes (1kg)
1 egg white, beaten lightly
1 teaspoon sumac
½ teaspoon chilli powder
½ cup (110g) tomato relish
Preheat oven to very hot. Line a baking tray with baking paper.
Cut unpeeled potatoes into wedges. Combine egg white, sumac and chilli in a large bowl;
add potato wedges, combine well.
Place wedges, skin-side down, on tray: bake in very hot oven for 40 minutes or until tender and golden brown. Serve with relish for dipping.
