Thai Beef Salad
500g Beef fillet
3 Medium green cucumbers (510g)
Peeled, sliced thickly
4 Red thai chillies, sliced thinly
3 Green onions, sliced thinly 1/2 cup loosely packed fresh mint leaves
1/2 Cup loosely packed fresh coriander leaves
Lemon grass dressing
1 Clove garlic, crushed
2 Teaspoons finely chopped fresh lemon grass
2 Teaspoons finely chopped fresh coriander root
1 Tablespoon lime juice
2 Tablespoons light soy sauce
1/2 Teaspoon fish sauce
2 Teaspoons brown sugar
Cook beef on heated oiled grill plate (or grill or barbecue) until browned all over and cooked as desired. Stand 5 minutes; slice thinly. Thai Beef Salad
Place beef, cucumber, chilli, onion, herbs
and lemon grass dressing in large bowl; toss gently to combine.
